New Orleans French Bread Recipe: Makes 4 loaves
Ingredients

* 2 envelopes dry yeast
* 2 tablespoons sugar
* 1 tablespoon salt
* 2-1/2 cups warm water
* 7 cups bread flour

Glaze

* 1 egg white beaten with 1 teaspoon water

this is the recipe i adapted, from the site cookingbread.com

http://www.cookingbread.com/recipes/classics_bread/new_orleans_french_bread_recipe.html

However i used my own levain starter, used 5 cups organic Rye flour and 2 cups organic unbleached white flour (and skipped out the eggwhite glaze cause i didn't have any).

Using the starter meant that the proofing time was much longer than it otherwise would have been and infact i am still not 100% convinced that my starter is as healthy as it could be.....but it rose enough and we pulled through in the end.

They were lovely,sour and chewy and ran out far too quickly :'(
